1 Blender or Food Processor Essential for achieving a smooth, blended sauce consistency.
1 Small Saucepan Only needed if you choose to lightly sauté the onions and garlic.
1 Cutting Board and Knife For prepping the fresh ingredients.
- 1 cup fresh Green Chillies such as Jalapeno or Serrano, stemmed. Deseed for a milder sauce.
- 1/2 medium Onion, roughly chopped
- 4-6 cloves Garlic
- 1/4 cup White Vinegar (or Apple Cider Vinegar)
- 1 tsp Salt (or to taste)
- 1/2 tsp Sugar (to balance the heat)
- 1 tbsp Oil (neutral oil like vegetable or canola)
- 1/2 tsp Cumin Powder (optional)
- 1/2 tsp Coriander Powder (optional)
Sauté Aromatics (Optional but Recommended): Heat the oil in a small saucepan over medium heat. Add the chopped onion and garlic and sauté for 3-5 minutes until they soften slightly. This mellows their flavor.
Blend the Sauce: Transfer the sautéed onion and garlic (if cooked) along with the green chillies, salt, sugar, vinegar, and optional cumin and coriander powder to a blender or food processor.
Achieve Smoothness: Blend the mixture until it is completely smooth and the consistency you desire. Stop the machine occasionally to scrape down the sides. If the sauce is too thick, add water, 1 teaspoon at a time, until you reach a smooth, pourable consistency.
Adjust and Serve: Taste the sauce and adjust the salt or sugar as needed. Transfer the sauce to an airtight container or a small serving bowl.
Storage: The sauce can be served immediately or refrigerated in an airtight jar for up to 2 weeks.
